Naturopathy – Raw Tacos

This is my recipe for healthy tacos!
It is adapted from the popular RAW taco recipe, however in Chinese Medicine raw food is said to slow down your digestion so I have added a chicken and black bean mix – great for your adrenals. Try it out!

Tacos
Baby cos leaves
1 serve cashew nacho cheese
1 serve chicken
1 serve salsa

Cashew Nacho cheese
1 cup cashews
Juice of 1 lemon
1 clove garlic
3 – 5 Jalapeños (taste)
Small handful coriander leaves

Place cashew nuts in blender, add water to just below the cashew line and blend.
Add remaining ingredients and blend until creamy.
Don’t overblend.

Chicken and black bean filling
1 tin of black beans
1 chicken breast diced
1 tsp cumin
1 tsp coriander
1 onion
Himalayan salt

Cook!

Salsa
1/2 red capsicum
1/2 yellow capsicum
1 tomato
1/4 cup chopped coriander
1 small red onion
Small garlic clove
Jalapeños to taste
Juice of 1 lime
Himalayan salt

Combine everything and make it look like the photo.
