I love mung beans, they are such a little powerhouse of goodness.
I get such a craving for them on a piece of sourdough with banana and tahini. It sounds pretty weird – I can assure you it is delicious!
They are high in protein and contain zinc, folate, magnesium, potassium and your B’s. I find they give me lots of energy. Think of them as though you are waking them up when you are sprouting them… and therefore waking your insides up too!
It is so easy to sprout them, just put a tablespoon or two in a small bowl and fill only up to their level with water.
By night, the water should have been absorbed. I like to rinse them every time I top up the water just to wash over any bacteria that may have gathered.
So give them a rinse, and repeat step one!
When you see the buds start to appear on them, they are done.
Store them in your fridge and top your salads or stir-fries, or even toast ;).
You will start to judge how many you need to sprout at a time depending on the many dishes you decide to add them to.
